Cheesy Couscous Fritters (Makes 8)

Just to prove how terribly middle-class I am, I always seem to have lots of couscous in the larder. The family is not that keen on just plain old couscous being served up so I've made these as an acceptable substitute.


150g couscous
200ml hot vegetable stock
2 eggs (beaten)
4-5 spring onions (shredded finely)
100g cheddar cheese (grated)


1. Place the couscous in a bowl with the vegetable stock. Cover with a plate and leave for 5 minutes.

2. Fluff up the grains and add the egg, cheese and spring onions and mix thoroughly.

3. Using floured hands shape into 8 cakes.

4. Heat 2 tbsp. of vegetable oil and cook 4 cakes for 2-3 minutes per side.

5. Place on kitchen paper and then heat another 2 tbsp. of vegetable oil and cook the other 4 cakes.

Serve with a salsa sauce and a green salad.
